My best friend in Toronto Canada owns a Chinese Restaurant and he told me they serve what the customer asks for.
They have Brown rice and Yellow rice also.
I doubt very highly that it would be tainted or they would be in major Troubles ok.

Nah it's not true that fried rice should be brown. There's different types of color. They fry the rice with some type of soy sauce to make it yellow/brown and what not.
Here are some tricks that used to improve the fried rice: 1/ Rice - Steam rice was prepared 24hours ealier. Or add half table spoon of butter to ensure each rice not stick together with other rice. 2/ Very hot wok. - Very high heat was use until the rice were "dancing" in the wok. Stir and shake the wok well so each rice are fried. 3/ Shrimp or prawn were treated. - shrimp were treated in cold water(some even add sugar in water) so it taste better and fresher. 4/ Hams or Chicken cubes. - hams or chicken that have many seasonning, sure taste great. 5/ Cooking oil(some add chicken fat!) and Soy sauce - Just right amount was apply. 6/ Seaseman oil. - A few drop of this just before serving. The aroma will stay with the rice. 7/ Chicken stock or MSG(Ajinamoto) - Not just plain water.
The color of the rice depends on the kind of oil used (ie. peanut oil will result in darker rice as compared to say, canola oil) and also the condiments used (ie. soy sauce). Some fried rice calls for soy sauce while other just use salt.
