Water moelcules in liquid state has a range of kinetic energy (KE). Some molecules have particularly high KE, some have lower KE. It is the average KE that is indicative of the temperature of liquid water.
At emperatures below boiling point, there are always some molecules that have KE strong enough for them to escape from the intermolecular attraction to escape into the air, forming water vapour. This is evaporation. Evaporation is different from boiling is that during boiling, almost all molecules acquire sufficient energy to escape into the air.

Once the high energy water molecules escapes into the air, they lose their energy rapidly by collisions with air molecules. Since temperature is a measure of the KE of water molecules, the decrease of KE of water molecules in air thus lower the temperature of water vapour until both air molecules and water (vapour) molecules are of the same temperature.
Since the number of air molecules in air is usually much much larger than the number of water (vapour) molecules, the energy that comes from the decrease of KE of water (vapour) molecules is shared out by the large number of air molecules. Therefore, the rise in air temperature would not be observable.
