<1. Would Protein Shake stop me from growing?>
No. Protein shake, as the name has implied, is no more nutrition. Mostly composes of protein, and some added other nutritions, e.g., carbohydrates, vitamin, minerals, etc. Yet it is just like eating very high protein food. Hence, it will not have any negative effect on your growth.
<2. What type of Protein would I need?>
There are 2 types of protein shake:
1. Why protein, which is mainly protein powder.
2. weight gainer, which is protein powder plus Carbohydrates and can provide more energy.
You are regular sports player, that both Rugby and gym workout are vigorous, and aim to gain muscles. Hence I will suggest you to try weight gainer. The extra carbohydrates in Gainer will aid your muscles building as well as recovery after sports.
I cannot suggest a brand or product for you, because different people may react to the same product very differently. Same product may be very good for me but cause diarrhea for you. You really need to try them yourself, one by one, and find the right products for you.
Usually, it is safe to start with something arround $3xx. Most people do not need expensive products, nor it is wise to get the cheapest.

If you mean the scoop, it is really not important, just a measuring tool.

Most protein shake instruction will suggest big serving size. However, usually half the recommended serve is enough. For example, if the instruction recommends 4 scoops per serve, then cut it into 2 scoops only. Normal people simply cannot take that much per serve.

As side note, I have the following additional suggetions:
1. drink more water and eat more fruit. Because protein shake's nutrition content is very high, that can result in more acnes. more water and fruit help to control this.

2. avoid drinking it 2 hours before meals. Protein shake, especially weight gainer, gives a very full stomach, and can affect your appetite.
