如何自製豆沙餡?
希望大約用30~40分鐘便可完成
回答時請包括: 材料, 份量, 做法
1. 好唔好把紅豆壓到冇雜質??
2. 壓後應去除外殼??
3. 要買多少g/斤紅豆, 滾熟後會有 6 兩
PS: 紅豆餡, 材料須在超市購買

我要做豆沙鍋餅,, 食譜如下
材 料 : 1 隻雞蛋
2/3 杯麵粉
4/5 杯清水
6 兩豆沙餡料

做 法 : (1) 置篩勻麵粉於深兜內,加入蛋汁和清水,攪勻
成濃度適中粉漿待用。
(2) 用平底鑊將粉漿煎成鍋餅數張留用。
(3) 將每張鍋餅包入適量豆沙餡料,做成扁條狀豆
沙鍋餅,隨即放入適量熱油內半煎炸至表面呈
微黃取出,吸乾油份切件上碟即成。

1- 先將所有材料攪勻 (圖1), 豆沙用保鮮紙壓成2塊長方型備用 (圖2)

2- 易潔平底鑊先搽勻生油, 再半份蛋漿平均倒入平底至填滿, 才開中火煮成蛋餅, 取出待涼, 放上豆沙, 再用蛋皮接好(圖3), 再用餘下材料重覆再做多塊豆沙餅

3- 中火落1湯匙油起鑊, 將接好的豆沙餅煎至金黃(圖4), 上碟即成
