I haven't read the novels yet, but from the anime, I think "godlike" is a good description of her powers. I think, in most senses of the word, the main insinuation is having control over existence and reality, which she has. I'd be interested to hear what you would consider "God" powers that makes you think otherwise? I think there's a big difference between her and, say, some human that got dropped in a pit of radiation and got altered. Yuki often states that she creates data out of nothing, and so nothing is involved in the alterations Haruhi makes but Haruhi herself. Also, I don't think just an altered human could affect reality on such a large, worldwide scale.
However, I do kind of lean toward the fan theories that claim the real god is Kyon! And by god, of course, that means doing the same thing that Haruhi is supposedly doing. Though he always complains about the chaos in his life, the whole situation he's living in seems very ideal to what he wants. He meets the aliens, espers, and time-travelers he has always dreamed of, and yet part of him still wants to live a normal life, so the aliens, espers, and time-travelers promise him he's normal and someone else is the weird one because that's what he desires to hear. Haruhi is probably there as the love interest and damsel he wants to protect (which, though ironic from her personality, is sort of true in the way he's forced to keep her happy).
...Still, I prefer calling myself a Haruhiist since it has such a nicer ring to it than "Kyonism" - haha. And, wait, Haruhiism IS a religion; what do you mean...? =P
In all seriousness, although I don't really believe it's how OUR universe began, the concept of Haruhiism (someone among us who is unconsciously shaping the world we live in) is actually a very interesting thing to think about. ^^
