Hi! i used to live in Hong Kong when i was younger, but also have been there recently. I would definitely recommend crossing to the mainland for a look around. I cant remember what side it is on but i would also strongly recommend you go up the Peak on the tram, because you get an amazing View of hong kong, with some great restaurants up there as well! If you want to go shopping, there is a great mall, called pacific place. At night you should watch the light show over the harbour, it's really cool! have fun!!!!

There are 3 Int'l colleges on Lantau. First is Lantau Int'l college, a especially small one. Following the British curriculum. inspite of the undeniable fact that that's in Tong Fuk, extremely a lengthy way faraway from everywhere. yet another 2 possibilities are come across college and Discovery Bay Int'l college. both are extremely solid, also in Discovery Bay, extremely close to to at least one yet another.

There's the Giant Buddha which is definitely worth seeing, a new cable car that takes you up a mountain, Disneyland, a national park, beaches and more. If you're going to be in HK for a month it's well worth a visit to Lantau to get away from the hustle and bustle of Hong Kong. In November don't worry too much about the humidity, it's much cooler in November and the humidity is lower, you'll probably even need a jacket in the evenings and nightime.

been to Hong Kong in 2007 and going in march this year there is loads to do you can go up Victoria peak on a friday night is the best but the tram might be busy but you can always get a taxi up for next to nothing.
to be honest with you there is not much to do in lantau if you stayed on main land Hong Kong you can go to lantau for the day which was just right other wise it just gets a bit boreing but the big Buddha is awesome. you could all so go to macau were there is the worlds largest casino and hotel im going there in few weeks all so the old fishing village is a nice day out.
plus if you stayed in Hong Kong you could get a visa and go into Guangzhou it takes about 2 hours on train

There are tons to see in Lantau Island! That's where the big outdoor buddha statue is located. There's also the temple where you can visit and have vegetarian meals. You can go over to Tai-O from Lantau. Tai-O is an old fishing village and if you're in to see the older side of Hong Kong, you won't be disappointed!

Humidity will not be much of a problem in November.

Also see this link which I think is comprehensive enough

Other than the airport and Disney there is not much on Lantau.
Most of the things to do are on the main island and the new territory or the peninsula.
There is no way to combat humidity except to dress light.
