Spaghetti in Tomato Sauce (鮮茄肉醬意粉)
Ingredients 材料:
意大利粉(熟) 2碗
spaghetti(cooked) 2 bowls
中型番茄 2個
medium tomato 2 pcs
免治牛肉(瘦) 3安士
lean minced beef 3 oz
蒜頭 2粒
garlic 2 cloves
碎歐芹 1/2杯
chopped parsley 1/2 cup
辣椒 1茶匙
chili 1 tsp
碎羅勒 1湯匙
chopped basil 1 tbsp
紅酒 1湯匙
red wine 1 tsp
鹽 2/3茶匙
salt 2/3 tsp
低脂芝士 2湯匙
low-fat cheese 2 tbsp
黑胡椒粒 少許
ground pepper little
薄荷 少許
mint little
Method 製法:
1. Lightly cut a cross the bottom of the tomatoes, place in boiled water for 20 to 30 seconds. When cool enough to handle, remove skin and seeds.
1. 將番茄的底部ɚ十字,然後放進滾水中煮20至30秒,取出並待稍涼後將其去皮及去籽。
2. Place tomatoes in blender, add chili, pepper, mint and garlic. Process until smooth, set aside.
2. 將番茄肉、辣椒、黑胡椒粒、薄荷及蒜頭放進攪拌器拌勻,盛起備用。
3.Place 1 tsp of olive oil in a non-sticky frying pan and add the minced beef, salt and red wine, stir-fry for 2 to 3 minutes.
3. 燒熱易潔鑊,下1茶匙橄欖油,放入免治牛肉、鹽及紅酒,炒2至3分鐘。
4. Add step(2), parsley and basil in step(3), stir-fry for another 1 minute.
4. 將(2)、歐芹及羅勒加進(3),繼續炒1分鐘。
5.Place the mixed sauce on top of the cooked and drained spaghetti and add cheese, bake for 3 minutes and serve.
5. 將以上醬汁淋上煮好的意大利粉上,然後灑上芝士再焗3分鐘,即可食用。
Pasta with Baby Octopus and Squid (八爪魚墨魚意粉)
Ingredients :
baby octopus(washed and cut) 4 pieces
baby squid(washed and cut)1 piece
rice oil(for deep frying) l ittle
white wine 1 cup
fettuccine 1/3 pack
sea salt flakes little
onion(finely diced) 1/2 piece
garlic(finely diced) 3 cloves
squid ink 1/2 pack
grounded pepper little
Italian parsley 2handful
basil 1/2 handful
Method :
1. Deep fry octopus and squid in 180℃ oil, remove and pour white wine over.
2. Cook pasta with water, oil and salt.
3. In a medium size skillet under low heat, add oil, onion and garlic and saute for 2 minutes. Add in octopus and squid. Squeeze in the squid ink. Add salt and pepper to taste.
4. Put the cooked fettuccine with the above ingredients and allow cooking for 1 to 2 minutes. Garnish with Italian parsley and basil. Serve immediately.
