Those are two of the immortal female characters I know.

Saber, Rider,and Caster from Fate/Stay Night (Well I mean they all died like way back when, but their spirits keeps being revived for being an epic hero for the Holy Grail Wars)

Sio from Afro Samurai Resurrection should have been immortal due to the power of the #1 headband.

The Merciful Goddess from Saiyuki

Sienna from the Bleach Movie Memories of nobody, since she is a composite of all the lost souls that haven't made it to the Soul Society, she lives on for as long as the mass of memories do.

Lust and Sloth from Full Metal Alchemist were techniquely immortal as long as their original remains were intact, since they were humoculi.

Excel, Hyatt and The Will of the Macrocosm from Excel Saga, apart from the Will of the Macrocosm, Excel and Hyatt continually die and somehow come back to life in their attempt to conquer F City (usually from the Will's power)

Pikachu and all the other 451 Pokemon.....they never actually "die"....they always just "faint".
