It is no defference. New Zealand accept all the leagal marriage and document issue by other country included Hong Kong and China. That means you an apply emirgration to New Zealand after mariaged even in Hong Kong or New Zealand.

Sar passpot ( Hong Kong passport ) holder can stay in New Zealand for 3 months and apply for another 3 months extension. Usaully it is enough time for apply of immigration if your husband / wife is a New Zealand citizen.

If you are going to immigrate to New Zealand, I will suggest you check their immigration system before getting married. Sometimes, you will have advantages over getting marry in Hong Kong. (They may allow your stay pending your application.)
