Put the rice in a metal bowl and put the metal bowl in an ice water bath. Try to get a lot of the bowl in contact with the ice water. Turn the rice every mnute or two to bring warm rice into contact with the bowl side.
The quickest way that I've come to for cooling the rice is spreading it out on a cookie sheet (usually with tinfoil over the sheet because I want to maintain the integrity of my rice) so that there's a larger surface temperature. Because I live in an area with cold winters, if I'm REALLY impatient, I'll shove it out on the patio for five to ten minutes, which can help bring the temperature down faster, but tends to make the top cold while the inside is still hot.
