The reason why I used this phrase was that I wanted to make this love letter
or something sound more romantic.

" Death" is singular here. In those two similar phrases,

" do" is served as a present subjunctive".

Subjunctive!!

This is the first Valentine’s Day we will spend together. Maybe you will think I am saying sweet words, but I usually bottom up my feelings inside. I believe nothing have to be said, it’s enough as long as we know each other’s hearts. It’s you that made me find the real happiness again. I hope I won’t make the wrong choice. I will miss you and love you always. I will only say this once.

U may think I don't really say sweet things to u, actually I always keep my saying deep inside my heart. I think it's ok when you know the feeling each other, and it doesn't need to say it out.
