Noodles.

I'd put my money on:

1. Sushi/Sashimi (even though it's pretty much a luxury because of the sky high prices of fish).
2. Handmade Ramen noodles
3. Beef curry with rice
4. Udon noodle soup
5. "Kama" -Grilled salmon/tuna collar (cheek)
6. Mochi- A traditional dessert made from rice
7. Dishes that use alot of miso and tofu
8. Kabocha squash-A Japanese favorite
9. Dishes that include chestnuts.

I've never been...so I'm only guessing.

Well everything sushi, sashimi, tappiyakki, noodles, kobe beef yjust some to name your going to have to find that out yourself google it!!!..

Well, you might try asking this in the Y/A travel section in Japan. There are lots of good guesses here and some might by good ones but go there and ask and a Japanese person might give you a spot on answer.
