I plan to go to Poland for a week or so in Mid-Feb onwards .
Buying a ticket to Poland by BA will cost roughly 7500HKD
And I have to catch the national coach from Heathrow to Gatwick myself ( extra coach fee added ) ''I find it rather expensive on this non-peak season !!

Or I can go to Amsterdam and take train / Cheap flight to France then Germany .
But the problem is I dont have a credit card / debit card ,cant book
the advance cheap ticket from Ryanair/ EasyJet online .
I am not sure if I can book the ticket rightaway from the sales desk /and if its easy to find any sales desk at the uk airport / holland one .
Please give me some suggestion !!

Buying airticket in airport is the most expensive way to get the ticket !!!!
You are right that you need to have a credit card if you want to book airticket and train ticket online. If you don't have any, you cannot reserve ticket as you maybe required to show the card when you are checking in.
If you think BA's ticket is expensive, you may consider other European Airline, e.g. Air France, Lufthansa, KLM. They also have flight to Warsaw via European cities. But I believe the ticket price will not be much lower than BA's
I don't understand why you need to go to Amsterdam first, then go to Germany via France. You can go to Germany directly on train from Amsterdam. But don;t underestimate the price of train ticket, it can be more expensive than flying.
I suggest you can consider other European Airline first, at least they don't need you to change flights in different airports and the cost should be lower.
