China has different provinces and so Chinese food will differ slightly, depending on what province it comes from.
I am very partial to traditional Sichuan food.

America, England, Australia and New Zealand all had Western bastardised versions.
Chinese food in China has to be eaten to be believed, hardly resembles the Western version.
