spinach, kaffir lime leaves, beet tops, sprout tops, um.... all the herbs I suppose - parsley, sage, rosemary, thyme, basil, fenugreek, mint, tarragon, oregano. Sorrel, lettuce, radicchio, lamb's lettuce, rocket, cress, mustard, maybe getting off the point.
I make nettle soup occasionaly.

Yes, I don't know what it's called, but in Korean cuisine, they have this leaf they used to wrap beef and rice. It tastes weird by itself, but when eaten with beef and rice it's awesome! I've seen people wrap tofu and rice with it, too. You might want to check with some Koreans about the name of the leaf.

Other leaves you can eat - I think seaweed (nori) qualifies, right?
