if you want to see the "metropolitan" side of Hong Kong, then all the above suggestions are great. But if you want to see the "cultural" side of Hong Kong, I suggest:

Lantau Island - the big Buddha
Tai-O - old fishing village
Lamma Island - another fishing village
New Territories - you can signup for a tour and they'll take you to the "villages" and temples, etc.

oh yes, Hong Kong is the best place i've ever been to and im going back next april with dad to find and meet my long-lost Chinese relatives living there. (im Filipino Chinese btw)
my top 5 Hong Kong tips for fun:
1. try seeing the symphony of lights every 8PM. the best place to watch it is on the promenade of Tsimshatsui in Kowloon side. the lights are so awesome...
2. Ngong Ping 360- in Tung Chung there is a cable car system called Ngong ping 360, it's very fun and exciting there. you get to see the airport and the big bronze buddha thing.
3. Lan Kwai Fong- they got the greatest bars ever!!!
4. The Peak- try riding the peak tram, it's pretty fun. ^^
5. Hong Kong Disneyland- if you have kids, it would be fun to ride along with them and also a good chance to meet your childhood fave disney character. finally, i met Goofy and Jane(from Tarzan) there.-lol
other cool places/stuffs in Hong Kong:
- got a fave Hong Kong actor/actress?
go to the avenue of stars in Tsimshatsui, you'll see handprints of actors and actresses like Jackie Chan, Jet Li, Bruce Lee and my fave Maggie Cheung. and Madame Tussauds is great place to see waxworks of famous Hong Kong and international stars like Brad Pitt, Saddam Hussein, Twins(Hong kong girl group) and such.
- Mid Level Central escalators in Central. they got the longest outdoor escalators ever. you'll get to see bars and shops as you go up.
- Harbour City in Tsimshatsui. it's a really big mall with shops like Chanel, Louis Vuitton and such, take your wifey there and (window)shop there.
hope you'll had fun there as much as i did last time

I have been 3 times and love to visit there. The trip on the sky rail cable car is great . Its on lantau island near the airport. you ride for over 7 kilometres over mountains there is a walking track but it would be some strenous walk then you can wander around the monastry visiting the big budha and there is a village there . Very cheap trip. Hongkong is a very busy place you will enjoy wandering around the harbour area and there are different trips you can take. Your hotel will give you all the information.

If you're alone then I suggest the best places that you should go will be; the Victoria Peak; Symphony of Light; the Cable Car ride in Tung Chung. Disneyland and Ocean park is not ideal without the kids. Don't go to Lan Kwai Fong - you maybe tempted!

You should check out a copy of CHINA: Portrait of a People at the HK bookshops, as it was published there. The most comprehensive book of photography on modern China ever published by a single author.

Lan Kwai Fong: Bars

Central SOHO area: Restaurants and bars. I find this area more interesting that Lan Kwai Fong

Lantau Island: Big Buddha

Ocean Park: Theme park. I reckon this is better than the HK Disneyland.

Not sure what your tastes are. Some suggestions anyway

- Lan Kwai Fong - for pubs and bars in Central
- Nathan Road Kowloon for shopping
- Disneyland & Ocean Park if kids are in tow !
- Street Markets - Stanley Market, Temple Street Night Market, Ladies Market , Jade Market.
- Dim Sum anywhere
- Macau to gamble your dollars away
