Next time use rice that was refrigerated from the day or so before. It will be dry and will cook better without soaking up the oil. Don't use much, just enough to coat the pan to keep food from sticking, and make sure it is hot before you put in your meat or veggies, put those aside, make sure the pan is clean and hot, with a tiny bit of oil and stir fry the rice quickly, a little at a time. If you have to add oil, just a teaspoonful at a time.

The only correct answer is written by Boogie. Add soy sauce if you want to darken the rice, add minced Chinese roast pork and a fried scrambled egg sliced thin and whatever else you like.

Oily Rice

fried rice
i do not boil it first
put approx 1 tablespoon of vegetable oil /or butter(ghee is traditional)
in a wok/frying pan
add spices to taste i use ~Chinese five spice and or star anise(just crush the seed pod
turn heat off let oil and spices infuse(10/15 minutes)
heat back up
put the dry(uncooked rice)into the oil it will start to go whiter and pop(3to 5 minutes)
turn heat off let oil and spices soak into rice(5 minutes)longer if you can
turn heat back up
add water (boiling for preference) till it covers the rice simmer for 5 minutes then turn heat off .rice will soak all the water up
if not just re-apply heat for 2 minutes
not as complicated as it seems as you can be preparing /cooking other ingredients.
hope this helps

use olive oil & only grease the pan w/ it . you can boil the rice too then give it flavor by frying it lightly in olive oil.

If you used the recommended amount of oil, then you might not have fried it quickly enough in a pan or wok that is very hot. Very hot.

put the fried rice into the fridge and let it cool down. Then re-fry it (don't use any oil). Just heat pan really hot and dump rice in. You might want to add a bit more vegetables as vegetables tend to soak up oil. You can also try pineapples (the citrus flavor/juice neutralizes the oil and adds a bit of "exotic" flavor to the dish)

cut the oilk or butter content

you can precook your rice the night before, fridge it, cook peas and carrot and then fry will pan or wok, limited oil or butter

Fried rice should be a little oily. Here's a tip next time you make it put some Kim-Chee in it witch is hot pickled cabbage that tastes awesome....
