The good thing about authentic Chinese food is that not everything is meat-based. You should be able to go into any restaurant and ask them for their vegetable dishes. Or, look for restaurants and menus that have this word: 素. It means "vegetarian".

My wife and I once traveled to a Buddhist temple in southern China. This temple operated a Vegetarian restaurant. It is small, only accommodating less than ten customers. But they served the most delicious Vege cuisine I ever had.
I forget the name of that temple, all I can remember it is in Fujian province, south of the provincial Capital Fuzhou.
