燒牛柳配蘑菇紅酒汁

材料:牛柳400克,鹽1/2茶匙,胡椒碎1茶匙

Chianti紅酒汁:欖欖油2湯,乾蔥碎20克,洋蔥碎50克,牛油30克,寶仙尼菌/白菌200克,番茄膏1湯匙,麵粉1湯匙,Chianti紅酒120克,上湯180毫升

製法:1)牛柳調味後,以鑊煎將牛柳底及面各煎至牛柳5成熟。
2)欖欖油炒香乾蔥碎、洋蔥碎和寶仙尼菌,加入牛油再下番茄膏炒香,倒入麵粉拌勻,注入紅酒和上湯,中火煮約20分鐘,以鹽及胡椒粉調味,便成Chianti紅酒汁。

3)Chianti紅酒汁即可與牛柳一同置碟上享用。
