" country" is a countable noun.
If you talk about only one western country, then you may just use a singular form.
If you talk about western countries, you refer to those countries.
In this case, you have to use a plural form.
Examples:
1) The U.K. is a western country. ( You are talking about just one western country here.)
2) English is spoken in many western COUNTRIES.( plural here)
It is because you are talking about more than one COUNTRY.
