皮蛋瘦肉粥
Preserved Duck Egg & Lean Pork Meat Congee
材料
Ingredients
米 - 1抔(一般電飯煲量杯)(約200克)洗淨
Rice - 1 cup (standard rice cooker measuring cup) (about 200gram), rinsed
皮蛋 - 2隻洗淨
Preserved duck egg - 2, washed
瘦肉 - 250克
Lean pork meat - 250 gram
調味料 - 醃瘦肉用:鹽2大匙;調味用:鹽1小匙
Seasonings-
for marinating pork: salt-2 tablespoon
for seasoning: salt 1 teaspoon
烹調
Cooking:
瘦肉加鹽醃10小時(或過夜)。
Marinate lean pork meat with salt for 10 hours (or overnight).
燒沸10(量)杯水(2公升500毫升),加入瘦肉,煮5分鐘。
Boil 10 (measuring) cups of water(2L 500ml), add in lean meat and cook for 5 minutes.
加入米,煲1小時,成粥。
Add in rice, and cook 1 hour to become congee.
撈起瘦肉,撕碎。
Pick up lean meat and tear into fibres.
皮蛋切粒。
Cut preserved duck egg into small dices.
加入瘦肉、皮蛋,略攬勻,加鹽調味,即成。
Add in lean meat, preserved egg, stir slightly, add salt to taste.
It is then finished.
