呢兩個都係法式歌劇院蛋糕內的咖啡忌廉做法:
1. from RTHK
牛油 - 150g
糖霜 - 50g
咖啡精 - 1湯匙
(或咖啡粉:水 = 60:40) (20g)
1. 用打蛋器將牛油及糖霜打至軟身
2. 加入咖啡精或咖啡拌勻即成.

2. 咖啡忌廉餡
即溶咖啡粉 4g
熱水 6g
糖 30g
水 12g
雲呢偪香油 1/2 tsp
蛋 1/2隻
蛋黃 1/2隻
牛油(已於室溫放軟) 75g
將咖啡粉溶於熱水內備用
蛋黃及全蛋打至發白及起泡備用
將糖,水及雲呢拿香油煮滾,一直攪拌至砂糖完全溶解,停止攪拌及將糖水續煮至124度
用打蛋器以慢速攪拌蛋糊,一邊將糖漿慢慢倒進蛋糊內,將打蛋器速度提升至中高速,一直攪拌至蛋糊稍稍凝固如綢緞狀及降至室溫
將牛油打成忌廉狀,分三次以中速打進蛋糊內,將打蛋器速度提升至高速至蛋糊細滑如綢緞狀
將咖啡液慢慢倒進(5)中,一直攪拌至完全混合

Coffee Cream Recipe
1 cup of thick whipped cream
1 teaspoon of instant coffee dissolved in
2 teaspoons of boiling water (let it cool)
1-2 tablespoons of glazed sugar
2 tablespoons of coffee liquor
Whip the cream, dissolved coffee, sugar, and coffee liquor together in a bowl.

2 cups Whipping cream
2 tablespoons Sugar
1/4 cup Coffee, very strong cold (cold)
2 tablespoons Coffee liqueur
Whip cream with 2 tablespoons sugar until soft peaks form. Add coffee and liqueur and beat until stiff.

有個就係用整tiramisu 既 soft cheese, 好似都幾好味:
Coffee cream
250g mascarpone cheese
2 tbs kahlua coffee liqueur
2 tsp instant coffee powder
2 tbs icing sugar mixture
whisk the mascarpone, kahlua, coffee powder and icing sugar in a bowl until well combined. Cover with plastic wrap and place in the fridge to chill.
