Well, 1am check-in. Normally count also ONE night unless the one that you choose with very exceptional case. Mostly check-in time in the afternoon but according to different hotels policy and room availabilities...
My experience, I check-in after 12 midnight at Conrad Bangkok before when I flew Emirates from Hong Kong on 2Sep(e.g) to Bangkok, the arrival time in Bangkok is 3Sep 00:05. Hotel also count me as 1 night.
Well, I have experience stayed at Four Points Darling Harbour Sydney. I have an early arrival flight with Qantas. When I arrived, they can assist me to have early check-in(depends on the room availabilities closer to the check-in time), however, I have to wait for the room available when I returned around 11:00am.
