I believe it's mainly because of the car design
First of all, it really depends on where the engine is located in the car. because it is where the exhaust gas is produced and that's why we need exhaust pipes to direct them out of the car.
The most common design is with the engine in the front. that means the pipe has to go from the front to the end of the chassis (車架底盤). if it is a Forward Engine Rear Wheel Drive car (FR)(後輪驅動), then it is impossible for the exhaust to be in the middle bacause the drive shaft (驅動軸) has to be in the middle connecting the engine gearbox and the rear differentials/wheels. but if it is a forward wheel drive (前輪驅動) then it is possible. for example. the current Mini Cooper have exhaust pipe in the center. However, it does affect the interior / trunk space with this design. so i think most manufacturer design the Forward Engine Forward Drive (FF) car with the pipe on the side for this reason.
On the other hand, if the engine is mounted behind the seats. (Mid-mounted or Rear-Mounted). the constraint is less. This is usually the case for high performance sportscars. examples are Porsche Boxter, Lamborghini Murcielago. However, it is not necessary to design the pipe in the middle. I guess a few constrain like exhaust volume and cooling issue will affect the design.
I think 4 wheel drive cars (4WD) which must have a drive shaft in the middle have similar consideration depending if the engine is forward / rear mounted.
