Try to see if you can find those info @ library.
I know HKU library has a Section where you can get all the statistic numbers.
And regarding for your question number 4, it's very personal.
If you are trying to work out an accurate numbe, hire a company to do 問卷, or simply, you can start your own by using your local phone numbers.
The more sections you put into your questionaire, the more accurate you are

it's usually cheaper then phone-in or show up at the hotel...,
you get to see the reviews for the hotel from the previous travellers.
There's many advantages about online booking....
