Evening and Weekend extra work for educated individual?

I highly recommend serving. The hours you want are what a restaurant or catering service wants too. As a caterer i made $15/hr plus tip, which was usually 18% or more. Many times this is in cash, as in no taxes taken out.
Waiting at a restaurant is not as consistent, but i still made atleast $13/hr after taxes. Also, it is a great way to meet people...and there are many highly educated servers, people who aren't too proud to work hard!

It depends greatly on geographic area. In The San Francisco area (high cost), RNs can easily make $80K-$100K per year.

If you have a Master's Degree, then I would suggest teaching either at the community college level or the university level. Many community colleges are looking for Music Appreciation instructors at this time of the year. The pay is very good and you can often teach online or in the evenings. If you teach online there is no gas costs, and it doesn't matter where the college is located.
Another idea is to teach music/singing lessons in the evening.

i used to work as a casual on thu nights and weekends in fashion retail....so some retail places may be willing to employ weekends only...
otherwise a lot of restausrants are always looking for wait staff and delivery drivers. some may be lower pay but it might be cash in hand.
