有關製作朱古力的問題

我想請問
1a有些朱古力食譜要求把朱古力雪藏,這樣取出朱古力及送人時,朱古力不就會溶掉了嗎?
 b那可以怎樣做?
2a有些朱古力只要放在室溫置硬身即可,但是我曾放置一小時它仍處於溶液狀態,若是在夏天製作朱古力,不就會失敗了嗎?
 b怎樣才可以使朱古力在室溫下仍能凝固?
 c在夏天時,凝固需時多久呢?

ps我只要求把上述問題清楚地回答,不需要提供食譜

答:其實朱古力如果你買到吳需要調溫嘎就吳是好怕溶..因為無需要調溫嘎朱古力熔點比較高所以應該吳怕
b那可以怎樣做?
答:如果買吳到只好用凍野包住..不過我吳建議甘做..因為朱古力可能會變形..甘到時就更加難看

答:吳需要調溫朱古力就吳會出現呢個問題..因為我舊都是隨便放響室溫

答:加強區個朱古力嘎百分比..不過吳是一般人做到
c在夏天時,凝固需時多久呢?
答:夏天凝固需時1小時左右..不過如果你響冷氣下整就可以快d

chocolate making requirement:
1. your room must switch on air-condition around 20-22C
2. chocolate making can be work on summer and winter, spring & fall.

chocolate knowledge:
1. dark chocolate must tempt the temperature to 30-32C, then shape it or spread it for decoration.
2. milk chocolate around 28-30C for working
3. white chocolate around 27-29C for working

PS:
1. only pure chocolate need to tempting, it will not set and hard if the temperature not correct.
2. chocolate compound is not necessary to tempt. but the working temperature around 40C
3. your chocolate not set - becasue the chocolate temperature not correct
it will set within 2 mins if temperature right, otherwise, it will not set even spend for 3 hours.

我想優質的朱古力是不會那麼易容溶掉的, 平價的除外..就算軟了點, 放入雪櫃雪一陣會硬番, 唔會走樣!

1a. 這是為了作定型之用
!b. 包上鋁/錫紙, 放入密實盒內

2a. 朱古力的成份多少會有影響, 因為朱古力是用谷古油來調節硬度和光責, 谷古油比朱古力還要貴!! 很多平價朱古力用牛油/ 大豆油代替谷古油! 如果你用牛油..咁你落少d會硬d卦!
2b. 買優質朱古力啦!
2c. 在有空調的室內當然快些!
