I saw the phrase ""anything but" in yahoo dictionary

It says
He is anything but clever
Can I wtire

Normally you don't. Usually you only use 1 word after 'but' in this
usage. e.g. "This is anything but easy", meaning it's difficult.

Usually, there is a formula to use a phrase like: anything but.

To use one single adjective only after that, for example:
Anything but smart, cleaver, lazy etc...
