How can I get my chicken breast soft when making it for a sandwhich?

Hey there, so I was wondering, how do you cook chicken breast so it's soft when you like make it for a sandwhich? I mean, when you go to restaurants ors oemthing, and their chicken is nice and soft, do you know what I mean? How do I get this, Mine always ends up having the skin on the outside of it getting like harder like when you grill it.

Bring water to a boil in a covered pot. Add some chopped onions and your favorite seasonings. Once it boils, add the chicken pieces to the water (skin the chicken pieces first, discard the skin) return to a rolling boil. Then SHUT OFF the HEAT and cover. Let the chicken sit in the hot water for 1 hour. Drain and cool the chicken. This is what you seek.

Shake-&-Bake the chicken breast and then use it to make your sandwich. My favorite is the original shake-&-bake mix. Bake the chicken, then add bread, sliced avocado and tomatoes. Because the chicken breast is already so flavorful from the Shake-&-Bake, you don't need much mayo or mustard.

i like to poach it - simmer the whole breast in a sauacepan till it's just covered with water. you can add some slice of lemon to it for a lovely flavour. That way it's nice and moist.

Buy boneless breast...pound it with the side of a saucer or a meat tenderizer if you have one. Put a little oil in a skillet and cook chicken until brown over a low flame,,,,,or on medium if you have electric stove...turn it over and cook the other side until lightly brown...then let it cool,, You can then slice it in thinner pieces or eat it whole.

Lightly sprinkle w/salt & pepper then tenderize it before placing on the grill.

Remove meat from grill and let it rest for several minutes before cutting.
