and why reduce stock not reduce stocks?
then when will we use plural?

Because you are referring to Inventory/Stock as a single entity. This is normal.In special cases, when you need to emphasis it's multiple inventories, you would
use plural. e.g. My company has 10 different inventories (i.e. warehouses).
