有關Melty Kiss軟朱古力制做問題,急!!

我依照以下方法去做, 但出來效果是 - 凝固後有層牛油在朱古力面上都幾厚, 點解會咁??係唔係我攪得唔勻, 定牛油份量唔駛太多??
有無人解決我問題????

調溫朱古力溶解

先將 2/3 的朱古力放入煲中,座於熱水上(剛好煲至出煙的水溫約45度),待朱古力完全溶化後,離開放入餘下 1/3 的朱古力攪拌之溶化(這樣可令朱古力降溫約26度),再座回熱水 約33度 ,再加入忌廉攪勻後再加入牛油及蜜糖攪勻, 再放入模。

苦甜朱古力275g
淡忌廉600g
蜜糖57g
無鹽牛油75g
可可粉適量

做法
1.將朱古力切碎,將淡忌廉放入鍋中煮沸離火,
倒入朱古力碎拌勻。
2.加入蜜糖和牛油拌勻。
3.將朱古力漿倒入模中,放入雪柜約4小時待其
凝固後,脫模切粒,沾上可可粉即成

I guess that your recipe contain so high fat content. Can be adjust as follow:

300gm dark chcoolate, chopped
600gm whipping cream
50gm honey
50gm butter

Preparation:
a) bring whipping cream to boil, remove from heat.
b) mix in chopped chocolate, keep stirring to combine.
c) stir rest of ingredients in chocolate mixture, allow to cool.
d) coat with cocoa powder.

Chocolate is not necessary to tempt, because u are cook for filling.
Unless u use for chocolate decoration.
