I think the one u ate outside was egg and heavy cream. heavy cream is made of milk, but it consists of more fat than milk. of cos you can add the milk or heavy cream into the egg mixture, it will make ur egg full of favour and smooth. you can also add some white pepper/meat/shrimps for your Chinese pan-fry egg, or add some black pepper/green pepper/red pepper/onion/tomato for the western crumble egg. The salt should be put after your egg done, because the salt will has bad chemical when it is cooking with egg. hope it can help you.
