The question is how to make congee WITH AN ELECTRONIC RICE COOKER. Any idea?

a basic rice recipe you use 1.5 to 2 cups of water for every cup of rice.

For congee, you use 2 cups of water for every 1/4 C of rice.

The rice cooker should work. You just need to check at 60 to 90 minutes. In other words, cooking congee won't be automatic for your rice cooker.

Most rice cookers switch mode from cook to warm when the temperature reaches a certain point, after the water has evaporated from the rice. With congee, there's so much water the temperature will not reach programmed "done" point so most likely your rice cooker will stay in cook mode. This is where you have to be careful and not let your congee burn.

Congee is a rice gruel, so extra water (or chicken stock is better) is needed. You could cook the rice in the rice cooker, then add to some stock in a pan, add whatever veggies and or chicken pieces you want. But why have the extra washing up? Leave the rice cooker in the cupboard and just use the pan with lots of stock in. That is how it is made in Vietnam. Enjoy!

you can cook congee using a rice cooker because there are rice cookers that can act as a steamer so the same thing, you can boil the rice continuously.

for 1/2 cup of rice use 6 cups of water, boil it until the rice is puffy. while boiling you can add the meat you want. season with salt and pepper. garnish with toasted garlic, ginger and onions.

The time on the electronic rice cooker is limited so if you want to cook congee is impossible.

You can try it though...

Use a SMALL amount of rice, put loads of water in and leave the lid OPEN. As the heat escapes, the electronic timer inside the cooker will probably think that the water isn't boiled hot enough.

Or you could boiled the rice beforehand and then when the rice is cooked and left cold. Add more water and boil the rice again until it becomes congee.
