做mousse cake or 慕士中的蛋?生 ?

係整mousse cake or 慕士中 , 太多都要用一隻蛋
但做mousse 係不用焗同煮 , 咁..即係食生蛋 ?

是否得ga ? or 無事ga ?

egg used in mousse, suppose need to be pasteurized (sterilized),
some use raw egg is not a properly way, u eat it in short time be fine.

don't be use for storage and delivery purpose. otherwise, some bacteria will multiply in this period.

so, the mousse base = egg, sugar, milk cook over double-boiler at 82-85C under stirring; another is whisk sugar & eggs up, and bring milk to boil, pour in egg-mixture, then stir over double-boiler to ensure the mixture pasteurized.
