cheesecake - whole egg will be added, aim to coagulate other ingredients while baking

mousse cake - use egg yolk, sugar and milk make a thicken base, then mix fruit puree and gelatin, whipped cream etc. Maintain a ideal texture in mousse cake.

whisk egg yolk, sugar, and milk on double-boiler, allow the base texture much more thicken.
the consistency more stable when mix with puree and whipped cream.
sometimes we save the egg white, beat with sugar ---make a meringue fold in mousse cake, achieve a chiffon mousse effect.
