I think you want to ask “why Dim Sum” is so popular in China and other country.

Dim Sum is the little Chinese cuisine which size is small and mostly done by steam. In china, we have an idea of “eating light” to keep healthy (輕食養生), so these little cuisines are very good to suit this healthy idea.

The name “DIM SUM” in Chinese means “a piece of (chef’s) mind”. They are the combination of craft and sincerity can be said as the essence of the chef’s art. So the requirement of good dim sum included its presentation (color and forms), texture (different levels of taste and use of materials) and the balance (nutrition) inside.

Because it is the essence of Chinese food, look fabulous and the size is small (they can try more in the same time), it also welcomed by non-Chinese.
