Fried Rice in Fujian Style

Ingredients : 2 bowl rice

1 Egg

25g Shrimp

25g Straw mushroom

25g Roast duck (shredded)

25g Chicken (dices)

1 tbsp green pea

1 tbsp sweet corn

1 tbsp carrot (dices)

1 Dried scallop (soak)



Sauce : 1/2 tsp sugar


1 tbsp oyster sauce


300 ml chicken stock





Thickening : 1 tbsp water


1 tbsp cornstarch





Method : (1) Rinse the shrimp. Cut into pieces. Wash the straw mushroom. Then,poach the straw mushroom, green pea & carrot. Tear the dried scallop into shred. Bring the oil to boil. Saute the chicken & shrimp. Set aside.


(2) Beat the egg. Fry the egg until half done. Then, pour in the rice, season with salt. Place to the dish.


(3) Boil the sauce ingredients. Then, add straw mushroom, green pea,carrot, dried scallop, roast duck, chicken, shrimp & sweet corn. Then,

Ingredients :(材料)
2 bowl rice(兩碗飯)
1 Egg(蛋一隻)
25g Shrimp(25克蝦)
25g Straw mushroom(25克草菇)
25g Roast duck (shredded)(25克燒鵝(切絲))
25g Chicken (dices)(25克雞肉(切粒)
1 tbsp green pea(青豆一湯匙)
1 tbsp sweet corn(玉米一湯匙)
1 tbsp carrot (dices)(甘荀一湯匙(切粒))
1 Dried scallop (soak)(乾瑤柱一粒(浸水))

Sauce :(醬汁)
1/2 tsp sugar(半茶匙糖)
1 tbsp oyster sauce(一湯匙蠔油)
300 ml chicken stock(300ml雞汁)



Thickening :(芡)(即廣東活的”獻”汁)
1 tbsp water(水一湯匙)
1 tbsp cornstarch(鷹粟粉一湯匙)

Method (做法):
(1) Rinse the shrimp. Cut into pieces. Wash the straw mushroom. Then,poach the straw mushroom, green pea & carrot. Tear the dried scallop into shred. Bring the oil to boil. Saute the chicken & shrimp. Set aside.

(1)將蝦沖洗,切成小片。清洗草菇。然後,水煮草菇,青豆,並甘荀。將瑤柱撕成細絲。把油煮沸,把雞與蝦快炒,然後備用。

油煎的米在福建樣式

成份: 2個碗米

1個蛋

25g蝦

25g草菇

25g烤鴨(切細)

25g雞(切成小方塊)

1個tbsp綠豆

1個tbsp甜玉米

1棵tbsp紅蘿卜(切成小方塊)

1隻乾扇貝(浸泡¡^
