Fried Rice in Fujian Style
Ingredients : 2 bowl rice
1 Egg
25g Shrimp
25g Straw mushroom
25g Roast duck (shredded)
25g Chicken (dices)
1 tbsp green pea
1 tbsp sweet corn
1 tbsp carrot (dices)
1 Dried scallop (soak)
Sauce : 1/2 tsp sugar
1 tbsp oyster sauce
300 ml chicken stock
Thickening : 1 tbsp water
1 tbsp cornstarch
Method : (1) Rinse the shrimp. Cut into pieces. Wash the straw mushroom. Then,poach the straw mushroom, green pea & carrot. Tear the dried scallop into shred. Bring the oil to boil. Saute the chicken & shrimp. Set aside.
(2) Beat the egg. Fry the egg until half done. Then, pour in the rice, season with salt. Place to the dish.
(3) Boil the sauce ingredients. Then, add straw mushroom, green pea,carrot, dried scallop, roast duck, chicken, shrimp & sweet corn. Then,
