Hi, I suggest you to skip Milan and use the 6 days for Rome , Florence and Venice . Milan only has one scenic spot, i.e. the Durmo. It is beautiful but not worth going there just for this church. Especially you will be seeing many other gorgeous churches in other places.
Travel in Italy is pretty easy since all the places you go have express trains linking them together. Though many people said trains in Italy are not reliable, the express train are alright, at least it will not be much delay.
Suggest itinerary :
Day 1 Arrive early morning in Rome , spend the first 2 nights here. If you need recommendation on scenic spots please let me know. But I guess you already have a plan in mind.
Day 2 Rome
Day 3 Rome . Leaving Rome in the evening and go to Florence . It takes around 3 hours by express train. Stay in Florence hotel.
Day 4 Florence
Day 5 Florence . Leaving Florence in the evening and go to Venice . Train takes around 3 hours from Florence to Venice .
Day 6 Venice .
Day 7 Leave Venice anytime you like.
Notes :
1. For airline I would suggest Alitalia since they have more frequent flights to Italy .
2. For hotel yes please try to book in advance in Hong Kong . Many travel agency such as Students Association provide hotel booking service with a little admin charge. You can also book via the internet. Anyway since June is not yet the busy season so even if you do not have a booking, there will be many options for hotel, pension or home stay. However as per the above itinerary, you will arrive each city late, so it is better to have the hotel booked first.
3. As for the expenses it really depends on the kind of hotel and catering you want. Euro is getting high so be prepared that the expenses when comparing with Hong Kong is quite expensive.

4. Since you are only going to 3 cities, I do not think you need to buy an Eurail pass, unless you are also traveling to other places.
5. Lastly, my personal opinion, your stay in Italy is really too short. You will have a lot to see and experience.

If you like church and museum, you will even need more time. For example just for Rome and Vatican I think you need 4 days to really enjoy the grandeur city.

For Venice if you go alone then may be one whole day is enough. If you have a travel mate that you want to share a good time with, then you have to enjoy the sunset and touring to other islands which is really romantic.
