I live in Upstate New York and attended ESL classes, maybe I can help. It's really depends on your English level, I attended the classes focus on speaking/listening; I think this is what you need too! Try to stay clam, and don't be afraid to ask, you will pick up in no time.

Utah is a neat one simply because its population is pretty much homogeneous and is mainly made up of Caucasian people. At that point, u probably could learn some good English.

However, most overseas ESL programs are more or less crash courses. As such, one may not pick up that much in the very limited time span.

The beauty of these courses is to give you the exposure and the eye-opening experience.

Take it from me, if you want to learn good English, you got to create the exposure for yourself.

BTW, which one did you pick? Snow College, WSU, UU, or USU?

I used to study in WSU and taught at USU…you bet, not the one in Logan, I am talking about the HK branch.

But you have to think twice before going to the Big Apple to do any ESL programs. Why? U can get by with Cantonese or Putonghua in the China Town, and the melting pot tolerates non English speakers in many ways. They have little Italy, 3 China Towns, pretty big Japanese communities, tons of Russians, massive Hispanic turfs….so you may need to go extra miles if u intend to do it in Big metropolises
And New Yorkers could go pretty grumpy because of the hectic pace...

some more of my 2 cents worth.. when I did college in Odgen, I saw tons of Japs. WSU used to launch an ESL program with JAL, and young folks were sent from Japan in droves. u bet, they enjoy their campus lives big time...but what can u expect from a crash course? L2 learning is an uphill battle.
