(1) use more fat beef, at least 80% lean and 20% fat. or
(2) use less fat beef, at least 97% lean and 3% fat, but you have to add little bit milk and breadcrumb into the beef.
Both ways have to follow this panfried steps:
The pan must be hot when you put your beef platter into it, then cook it about 1 min. and turn to medium heat for another 5 mins. when you see the outside edge is brown and there is little bit colour changing on the surface of beef platter, then turn it and cover the lib and cook for 3 mins. After cooking, rest your beef platter for at least 10 mins, then it will absorb its juicy.
