If earth is split in half, leaving only a semi-sphere spining; would there still be gravity? Would I be floating at the center of the flat surface semi-sphere? > D

No, if the earth was split in half the center of gravity would be towards the center of the semi-spheres. you could walk on the flat surface (even though the gravitational pull would be less. But as you walked away from the center of the flat side the ground would be getting "steeper".

At the center of the eart (without spliting in half), all the gravity is cancelled out (meaning there is none). If you were to split it in half, there would be exactly half the gravity, distributed less evenly than previously. Say you split it at the equator, the gravity along the equator would remain mostly unchanged (it's a simplification), but the gravity in the north pole would be about half (again, simplification), until the earth adjusts itself in a new sphere. You would not be floating anywhere along it's surface.

yes, gravity is the mutual attraction of any and all objects with mass.

Yes, but the gravity is also half of the earth's gravity now. If that ever happened. But it's quite complicated because the earth will also loose most of it's atmosphere, so does the moon. And the rotation and axis of the earth will be in chaos.
