hi, try to use {less water} foods to put into ur 春卷. Then you need to fry 春卷 twice (2 times).
the 1st time for cooking (medium high heat oil)
the 2nd time for crunchy (after frying at the 1st time, bring ur oil to the very hot temperature to fry them again)

Sandy 講得啱,係要炸兩次.

但我第一次會用中慢火炸熟,到將要離鑊便加至猛火才撈起,

唔係好易過深色或燶.

第二次在食之前才放落滾油炸 30 秒左右撈起.半個鐘內都仲脆嘅.

我諗酒樓可能啲火力夠,呢樣應該加唔到乜野卦.
