香煎豬扒 Pork Chop and Lemongrass

•【材料】
豬扒十四安士
洋蔥碎四湯匙
蒜蓉二茶匙
酸子薑二茶匙(切蓉)
淡奶三湯匙

【做法】
1.將豬扒洗淨,抹乾,用刀背拍鬆,與醃拌勻,再加入一湯匙生油,拌勻醃一小時。
2.取二茶匙生粉拌入豬扒內,落鑊中以中火煎至兩面微黃熟透,取出上碟。
3.將蒜蓉、洋蔥碎慢火炒香,加入酸子薑蓉,灒酒,慢火煮二分鐘,再以生粉埋獻。
4.拌入淡奶,加入芫茜碎,淋汁於豬扒表面,即成。

【做法】Cooking steps
1.將豬扒洗淨,抹乾,用刀背拍鬆,與醃料拌勻,再加入一湯匙生油,拌勻醃一小時。
Wash and dry the pork chops. Use the blunt edge of a choppers knife to tap on the meat fibre until the pork chops are softened. Then add the preserve seasonings and mix well. And again, add in a tablespoonful of cooking oil and preserve for one hour.
2.取二茶匙生粉拌入豬扒內,落鑊中以中火煎至兩面微黃熟透,取出上碟。
Add 2 teaspoonful of corn starch into the preserved pork chops. Pan-fry them in two sides by mediun fire, until they are slightly golden in colour. Then place them on the dish.
3.將蒜蓉、洋蔥碎慢火炒香,加入酸子薑蓉,灒酒,加入汁料慢火煮二分鐘,再以生粉埋獻。
Stir-fry the minced garlic and minced onion by small fire. Add minced sour ginger sprout in. Then sprinkle wine, add the sauce ingredients and cook for 2 more minutes . Mix a teaspoonful of corn starch with 2 tablespoonful of water. Pour this mixture in, and cook until the sauce a little bit thickened.
4.拌入淡奶,加入芫茜碎,淋汁於豬扒表面,即成。
Add evaporated milk and minced parsley into the sauce. Pour the sauce on the pork chops. It is ready to serve now.

1 tablespoon mustard sauce

Health powder 1 tablespoon
[Expected] juice
2 cups chicken soup -
1 teaspoon granulated sugar
1 tsp oyster sauce
A quarter of a teaspoon of sesame oil
A quarter of a teaspoon pepper

[Approach]
1. Zhubai will wash, wipe with Daobei shoot loose, and salted meat, add a tablespoon source, the meat salted one hour.

Lemongrass Pork Chops

Ingredients:
Pork Chops - 14 oz.
Onions - finely chopped - 4 Tbsp.
Garlics - finely chopped - 2 tsp.
Preserved young ginger roots - minced - 2 tsp.
Evaporated milk - 3 Tbsp.
Coriander - chopped - 2 Tbsp.

Marinade:
Chicken broth mix - 1 tsp.
Sauce - 1 Tbsp.
Dijon mustard - 1 Tbsp.
Chili sauce - 1/2 Tbsp.
Light soya sauce - 1 Tbsp.
Cornstarch - 1 Tbsp.

Sauce:
Chicken stock - 2 cups
Castor sugar - 1 tsp.
Oyster sauce - 1 tsp.
Sesame oil - 1/4 tsp.
Pepper - 1/4 tsp.

Directions:
1. Wash and dry pork chops. Tenderize pork chops by using back of knife. Combine all marinade
ingredients and 1 Tbsp. of oil in a large bowl. Add pork chops and marinate for 1 hour.
2. Add 2 tsp. of cornstarch to pork chops. Fry pork chops over medium heat until both sides golden and
pork chops done. Place pork chops on a serving dish.
3. Fry garlics and onions over low heat. Add preserved young ginger roots and wine. Cook over low heat
for 2 minutes. Add sugar, oyster sauce, sesame oil, pepper, chicken stock/cornstarch mixture and stir
until thick.
4. Stir in evaporated milk. Add chopped coriander. Finish by pouring sauce over pork chops.
