香煎豬扒 Pork Chop and Lemongrass
•【材料】Ingredients
豬扒十四安士 12 ounces of Pork Chops
洋蔥碎四湯匙 4 tablespoonful of minced union 蒜蓉二茶匙 2 teaspoonful of minced garlic
酸子薑二茶匙(切蓉) 2 teaspoonful of minced sour ginger sprout
淡奶三湯匙 3 tablespoonful of evaporated milk
芫茜碎二湯匙 2 tablespoonful of minced parsley
【醃料】Preserve seasonings
雞粉一茶匙 a teaspoonful of chicken powder
汁一湯匙 a tablespoonful of sauce
芥辣醬一湯匙 a tablespoonful of mustard paste
辣椒汁半湯匙 half tablespoonful of tobasco sauce
生抽一湯匙 a tablespoonful of light soya bean sauce
生粉一湯匙 a tablespoonful of corn starch
【汁料】 sauce ingredients
清雞湯二杯 2 cups of clear chicken borth
砂糖一茶匙 a teaspoonful of sugar
蠔油一茶匙 a teaspoonful of oyster sauce
麻油四分一茶匙 1/4 teaspoonful of seasame oil
胡椒粉四分一茶匙 1/4 teaspoonful of pepper
【做法】Cooking steps
1.將豬扒洗淨,抹乾,用刀背拍鬆,與醃料拌勻,再加入一湯匙生油,拌勻醃一小時。
Wash and dry the pork chops. Use the blunt edge of a choppers knife to tap on the meat fibre until the pork chops are softened. Then add the preserve seasonings and mix well. And again, add in a tablespoonful of cooking oil and preserve for one hour.
2.取二茶匙生粉拌入豬扒內,落鑊中以中火煎至兩面微黃熟透,取出上碟。
Add 2 teaspoonful of corn starch into the preserved pork chops. Pan-fry them in two sides by mediun fire, until they are slightly golden in colour. Then place them on the dish.
3.將蒜蓉、洋蔥碎慢火炒香,加入酸子薑蓉,灒酒,加入汁料慢火煮二分鐘,再以生粉埋獻。
Stir-fry the minced garlic and minced onion by small fire. Add minced sour ginger sprout in. Then sprinkle wine, add the sauce ingredients and cook for 2 more minutes . Mix a teaspoonful of corn starch with 2 tablespoonful of water. Pour this mixture in, and cook until the sauce a little bit thickened.
4.拌入淡奶,加入芫茜碎,淋汁於豬扒表面,即成。
Add evaporated milk and minced parsley into the sauce. Pour the sauce on the pork chops. It is ready to serve now.
