Well, you basically answered your own question.
Adaptations allow living things to survive in new habitats/environments. Darwin's points:
1. Competition
2. Adaptation
3. Reproduction
Those living things that do not adapt to their environment will not survive to reproduce.
In terms of people assisting:
By replicating the original environment, humans can create habitats that animals can survive in sucessfully. Obviously Zoos do that, especially at this point. You rarely see cages and tanks in zoos anymore. Its about creating habitats.
Then, by slowly manipulating those replicated habitats, animals will adapt to those changes. For example, animals at the Bronx Zoo make certain adaptations. While humans can closely mimic natural habitats, it is NOT a natural habitat. Animals' diets change, their behaviors change, their mating strategies/abilities change.
