Ingredients:
Chicken feet, pork bones, fresh peanuts, black-eyed beans, black moss, mushrooms,
1-2 pieces of dried scallop, dried mandarin peel, sweetened dates, Chinese red dates
Steps:
Blanch the chicken feet in water with a piece of ginger. Put in the chicken feet while the water is still cool and bring them to a boil together for better result in removing the blood and odour of rawness.
Soak the black moss in water until it is soft. Set aside. It is not to be put into the soup until the last 30 minutes of cooking.
Fill the soup pot with water and bring it to a boil. Put in all ingredients except the black moss. Turn up the heat.
Leave the soup to cook on high heat for 30 minutes. Then turn to medium heat and continue to cook for 2 more hours. Put in the black moss and cook for further 30 minutes on high heat.
Season with salt when serving.
