Q1
Actually, manure contains humus that can improve the soil texture which will lead to a better growth a crops, also it avoid over concentration of particular substance, to enhence the healthy grow of crops.
However, due to the present of bacteria or pest, food may have chance to get infect by disease and get parasites. but that is not really common

Q2
It depends. Organic means without using any artifical fertilizer, and it is all natural. It will be more accurate to say GM food can produce better food, it is possible that organic and conventional food have no different in taste
