The original Boeing 737 had a maximum seating capactiy of 118, but there are numerous vairant models that can carry either fewer or more depending on the configuration. 737s are not equipped with fuel dump systems.

The Boeing 757 has a capacity of around 200 passengers, making it substantially larger. I beleive the 757 does have fuel dumping capability, but could not confirm that with a quick research attempt, sorry.

The 757 is larger than the 737. Neither aircraft are capable of dumping fuel while in flight.

Not all Boeings have fuel dumping. Many earlier models in particular don't. On the 767, for example, some do and some don't!

757 is bigger. You could say it is a stretched version of the 737 as they have the same number of seats each side.

Many charter airlines use 757's while low cost airlines would use 737's

The 757 is a very versatile aircraft. Some airlines such as Delta and American will fly the 757 ETOPS version across the Atlantic Ocean to smaller European cities. Right now some the 757 aircraft in service are not that old that they need to be replaced. The only aircraft I can see right now replacing the 757 is the Airbus 330. The 787 I see more for long distance flights such as to Asia. But it may be possible to use the 787 between smaller cities since the aircraft seats around 230 passengers depending on the model.
