what kinda stuff are you after? If you like to party you must visit Lan kwai Fong in Central. It's where its at.
Shopping go to Times Square in Causeway bay or IFC Mall in Central. Actaully Hong Kong is like one huge shopping mall everywhere you go there are shops galore!
For touristy sight seeing go to Tsim Sha Tsui Harbour and soak in the view. Also go to the Peak and take the tram up there. Its in Central also. Its quite an experience and there are things to do in the mall up there too like a Ripleys believe it or not and bubba gump restaurant.
Check out the day and night markets in Mong Kok. Take the MTR (subway) there and get out at either exit D and follow the crowd! Not recommended if you are claustrophobic, but a definite fun experience.
Also check out the night market in Jordan. You can go to Temple street and get someone to read your fortune (palm, face, etc).
If you are interested in seeing greenery you can go to the reservoir in aberdeen.
As for other islands in HK, one tourist must see is on Lantau Island, same island that the airport is on. That tourist site is the Big Buddha. You can look it up I am not sure whether its like the biggest Buddha in like south east asia or something. It's pretty impressive. You can also take the cable car up there from Ngong Ping station (MTR). Its an amazing view from up there looking down on the HK islands!!
