Steam & Microwave

How can the steam make the food become cooked ... Please tell me the principal... Also, i want to know how can the microwave make the meat food become hot . i want to know th principal ... Finally , can you tell me why i put the egg in microwave oven the egg will crack...... thank you ... you can explain in english or chinese what you like ... Thank you
