Baked Tomato and Chicken Rice
焗雞扒燴飯配甜酸汁
Ingredients:
Chicken Thigh - clean & patted dry 2 pieces
Cooked Rice 2 bowls
Mozzarella Cheese (optional)
Marinate:
Soy Sauce 1 teaspoon
Salt 1/2 teaspoon
Sugar 1 teaspoon
Garlic - minced 1 clove
Sauce:
Fresh Tomato, cut into chunks 2 pieces
Ketchup 2 tablespoon
Sugar 3 tablespoon
Red bell Pepper, cut into small pieces 1/2 piece
Onion, cut into small pieces 1/4 piece
To Marinate the Chicken :
1.
Place the chicken in a medium size bowl.
2.
Add soy sauce, salt, sugar and garlic into the chicken.
3.
Using a fork, mix together chicken and the marinade. Combine well and set aside.
To Cook the Chicken :
1.
Add 1 tablespoon of olive oil into the frying pan over high heat.
2.
Add chicken and cook meat for 8-10 minutes or until golden brown.
3.
Transfer cooked meat onto a plate. Set aside.
To Make Tomato Sauce :
1.
Mix ketchup, sugar and 4 tablespoons of water together in a small bowl.
2. Using the frying pan, cook onion for 3-4 minutes.
3. Add tomato and bell pepper and stir fry for another 4 – 5 minutes or until tomatoes are getting wilted.
To Assemble the Lunch Box :
1.
Scoop the cooked rice into a baking dish.
2.
Place the cooked chicken thighs on top of the rice.
3.
Pour tomato sauce onto the chicken rice.
4.
Sprinkle with mozzarella cheese.
5.
Bake in 180 ° C oven for 10-12 minutes.
6.
Remove from oven. Serve immediately.

4.
灑上芝士。
5.
